That looks delicious. I might replace the chick peas with buckwheat. Chick peas and I don't get along very well. I have tried to be nice, but they are the bikers of the legume world.

I hear you--chickpea flour doesn't agree with eveyrone. I'd aim for another high-protein flour, like maybe soy? Or quinoa? I think buckwheat might not work the same. Though always worth a try!
